Blackberry Cobbler

I make cobbler mostly for the filling, but there's no going wrong with a crispy biscuit-y crust on top. You can make cobbler out of many fruits, but my favorite is blackberry. Vanilla ice cream is mandatory.

Ingredients

Filling

  • 3 pints fresh blackberries
  • 1/4 cup sugar
  • Juice of 2 lemons or limes

Crust

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • Pinch of salt
  • 4 tbsp COLD butter, diced

Directions

  1. Preheat the oven to 350F/77C and grease a square baking pan with butter.
  2. Add the blackberries, sugar, and lemon juice to a pot. Cook on low heat until the blackberries liquefy.
  3. As the berries cook, combine the flour, sugar, and baking powder in a bowl. Then, knead the butter pieces in with your hands until it combines with the dry ingredients. It should turn into a thin dough that you can shape with your hands.
  4. Pour the berries into the pan, then top with thin pieces of the crust dough.
  5. Bake for 20-30 minutes or until the crust is golden brown.
  6. Serve in a bowl with vanilla ice cream.
